Arancini with Sausage and Mushrooms

Of course, arancini with sausage and mushrooms are a delicious variation of the classic Sicilian arancini. Here I propose a recipe to make this tasty snack.

Ingredients

  • 200 g of risotto rice (such as Arborio or Carnaroli)
  • 500 ml of meat or vegetable stock
  • 1 small onion, finely chopped
  • 1 clove of garlic, finely chopped
  • 100 g of sausage, crumbled
  • 200 g of mushrooms (such as champignons or porcini), cleaned and chopped into small pieces
  • 50 ml of white wine
  • 80 g of peas (fresh or frozen)
  • 1 packet of saffron
  • 100 g of Parmesan cheese, grated
  • 2 eggs
  • Flour, as needed for breading
  • Breadcrumbs, as needed for breading
  • Oil for frying

Preparation

  1. In a large pan, sauté the onion and garlic with a bit of oil until they become translucent. Add the crumbled sausage and cook until browned. Add the mushrooms and let everything cook until they are soft. Deglaze with the white wine and let it evaporate.

  2. In the meantime, cook the rice. In another pan, lightly toast the rice without oil. When it is warm to the touch, begin to add the stock a little at a time, making sure the liquid is absorbed before adding more. Halfway through cooking, add the peas.

  3. When the rice is al dente, add the saffron and the Parmesan, mix well and turn off the heat. Let the rice cool on a flat surface, such as a tray, to stop the cooking process and allow it to be worked with more easily later on.

  4. Once the rice and sausage and mushroom ragout have cooled, start to assemble the arancini. Take a handful of rice and flatten it in your hand, place some of the sausage and mushroom ragout in the center, and close the rice around the filling, shaping it into a ball or a cone.

  5. Dip the arancini first into the beaten egg, then into the flour, and finally into the breadcrumbs, ensuring they are well coated.

  6. Heat ample oil in a pan or a deep fryer and fry the arancini until they are golden and crispy.

  7. Once fried, let them drain on paper towels to remove any excess oil.
