Apricot Plumcake

Ingredients
- 200 g of fresh apricots (you can also use canned ones if not in season)
- 180 g of all-purpose flour
- 160 g of granulated sugar
- 3 medium-sized eggs
- 100 g of unsalted melted and cooled butter
- 60 ml of milk
- Zest of 1 untreated lemon
- 1 packet of baking powder (about 16 g)
- A pinch of salt

Apricot preparation: Wash the apricots, cut them in half, and remove the pit. If you prefer, you can further cut them into smaller segments.

Dough preparation: In a large bowl, beat the eggs with sugar until you have a light and fluffy mixture. Add cooled melted butter, milk, and grated lemon zest, mixing well after each addition.

Dry ingredients: In another bowl, combine sifted flour with baking powder and a pinch of salt. Then add these dry ingredients to the liquid mixture, folding them in gently to avoid the formation of lumps.

Adding the apricots: Fold the apricots into the batter, reserving some to decorate the surface of the plumcake before baking.

Preparing the mold: Grease and flour a plumcake tin or line it with parchment paper. Pour the mixture into the mold and arrange the reserved apricots on the surface.

Baking: Preheat the oven to 180 °C and bake the plumcake for about 40-45 minutes, or until a toothpick inserted in the center of the plumcake comes out clean.

Cooling: Once baked, let the plumcake cool in the mold for about 10 minutes, then transfer it onto a rack to cool completely.
Curiosity
The name “plumcake” is a bit misleading because, despite its name, it does not need to contain plums (“plum” in English). In Italy, the term has become widespread to indicate various types of elongated-shaped baked sweets, often prepared with fruit or other ingredients.
And if you wanted to add an additional Italian touch to this recipe, you could add a handful of finely chopped almonds or a dash of amaretto liqueur to the batter to enhance the flavor of the apricots.
