Apricot Muffins

Apricot muffins are a delicious choice for a sweet breakfast or an afternoon snack. Here is the recipe to prepare them:

Ingredients

  • 250 g of all-purpose flour
  • 150 g of sugar
  • 100 g of melted butter
  • 2 large eggs
  • 120 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • Zest of 1 lemon
  • 200 g of fresh apricots (or dried apricots, if not in season)

If you do not have fresh apricots, you can also use dried apricots, softening them in warm water or apple juice for about an hour before incorporating them into the dough.

Preparation

  1. Pre-heat the oven to 180 °C (356 °F) and prepare a muffin pan by lining the compartments with paper liners.
  2. In a large bowl, mix together flour, sugar, baking powder, and a pinch of salt.
  3. In another bowl, beat the eggs and add the melted butter, milk, and grated lemon zest.
  4. Cut the fresh apricots into small pieces, making sure to remove the pit.
  5. Combine the wet ingredients with the dry ingredients, stirring everything with a spatula until you have a homogeneous mixture, but avoid overmixing.
  6. Gently fold the apricot pieces into the batter.
  7. Fill the paper liners to two-thirds of their height.
  8. Bake for about 20-25 minutes or until the muffins are golden and a toothpick inserted into the center comes out clean.
  9. Once baked, let the muffins cool on the work surface before serving them.
