Pasta with Shrimp and Red Mullet Fillets
17/11/2023Here’s a recipe that melds the sea with the land in a dish that celebrates Mediterranean flavors. Pasta with shrimp and red mullet fillets is an elegant dish that would look right at home on a seafood restaurant’s menu but, with the right instructions, it’s possible to recreate it at home.
Ingredients
- 320 g of pasta (linguine or spaghetti are fine)
- 200 g of shrimp, already shelled and cleaned
- 200 g of red mullet fillets
- 2 cloves of garlic
- 1 bunch of chopped parsley
- 250 ml of dry white wine
- 400 g of cherry tomatoes
- Extra virgin olive oil
- Salt and pepper to taste
Preparation

Start by cleaning the red mullet fillets if you haven’t already done so. Remove any bones with tweezers and dry them well.

Prepare the shrimp by shelling them and removing the intestinal tract. Rinse them well under cold running water.

Bring a pot of salted water to a boil for the pasta. When boiling, cook the pasta according to the package instructions to be al dente.

Meanwhile, take a large skillet, pour a drizzle of extra virgin olive oil, and add the peeled garlic cloves. Let them brown slightly and then remove them.

Add the red mullet fillets to the skillet and brown them briefly for a few minutes on each side, then remove the fillets and set them aside.

In the same skillet, add the shrimp and sauté them until they turn pink. At this point, deglaze with the white wine and let the alcohol evaporate.

Add the cherry tomatoes, previously washed and halved, and cook for 5-7 minutes over medium heat until the tomatoes begin to break down. Season with salt and pepper to taste.

Reintroduce the red mullet fillets to the skillet with the shrimp and tomatoes, and let it all flavor together for a few minutes.

Drain the pasta and pour it into the skillet with the seafood sauce. Mix well to allow the flavors to be absorbed.

Add the chopped parsley and mix again.

Plate and, if desired, add a drizzle of raw olive oil and a sprinkle of black pepper.
Serve the pasta immediately while it’s hot, pairing the dish with a glass of chilled white wine, perhaps a Fiano or Vermentino, which pair beautifully with fish.
