Apple and Walnut Cookies

Ingredients
- 250 g of all-purpose flour
- 100 g of brown sugar
- 100 g of butter at room temperature
- 1 large egg
- 1 large apple, peeled, cored, and diced
- 80 g of chopped walnuts
- 1 teaspoon of baking powder
- 1 teaspoon of ground cinnamon
- A pinch of salt
Preparation
- Preheat the oven to 180 °C and prepare a baking tray by lining it with parchment paper.
- In a large bowl, mix the flour with the baking powder, cinnamon, and a pinch of salt.
- In another bowl, beat the butter with the brown sugar until creamy. Add the egg and continue to beat until well incorporated.
- Gradually add the mixture of dry ingredients to the butter, sugar, and egg mixture, stirring until you have a homogeneous dough.
- Fold the diced apples and chopped walnuts into the dough.
- Take portions of the dough with a spoon and place them on the prepared tray, leaving some space between each cookie.
- Bake the cookies for about 15-18 minutes or until golden and slightly crispy at the edges.
- Remove the cookies from the oven and let them cool on the tray for a few minutes, then transfer them to a rack to finish cooling.
