Apple Tart

Ingredients
- 300 g of all-purpose flour
- 150 g of cold butter, diced
- 120 g of sugar
- 1 egg
- 1 yolk
- Grated lemon zest
- 1 pinch of salt
For the filling:
- 3-4 apples, depending on the size
- Juice of half a lemon
- 2 tablespoons of brown sugar
- 1 tablespoon of ground cinnamon (optional)
- Apricot jam or other flavor of your choice to spread over the tart base
Preparation
- In a large bowl, mix the flour with the sugar, grated lemon zest, and a pinch of salt.
- Add the cold, diced butter and quickly work the mixture with your fingertips until it resembles coarse sand.
- Add the egg and yolk, then quickly form a ball without overworking the dough, wrap it in plastic wrap and let it rest in the refrigerator for at least 30 minutes.
- Meanwhile, peel the apples, remove the cores, and slice them thinly. Place them in a bowl with the lemon juice, brown sugar, and cinnamon, and let them marinate.
- Roll out the dough into a sheet about 5 mm thick and line a tart tin previously buttered and floured with it.
- Prick the base with a fork, spread a layer of your chosen jam over it, then arrange the marinated apple slices on top.
- Bake in a preheated oven at 180 °C for about 40-45 minutes or until golden.
- Let cool before serving.
