Apple Plumcake

Apple plumcake is a delicious and comforting dessert, perfect for breakfast or as a snack. Here’s how to prepare it.

Ingredients

  • 2 apples
  • 200 g of flour
  • 160 g of sugar
  • 2 eggs
  • 100 ml of milk
  • 80 g of melted butter
  • 1 packet of baking powder
  • 1 pinch of salt
  • Grated zest of 1 lemon
  • Ground cinnamon (optional)

Preparation

  1. Start by preheating the oven to 180 °C.
  2. Peel the apples and cut them into cubes or slices, as you prefer. If you like, you can sprinkle them with a bit of cinnamon to add a spicy touch.
  3. In a large bowl, whisk the eggs with sugar until the mixture is light and frothy.
  4. Add the melted butter, now cool, and milk, stirring to blend the ingredients well.
  5. Add the sifted flour with the baking powder, a pinch of salt, and the grated lemon zest, and mix gently to avoid lumps.
  6. Fold the apples into the mixture, distributing them evenly.
  7. Pour the batter into a previously buttered and floured plumcake mold.
  8. Bake the plumcake for about 40-45 minutes or until a toothpick inserted in the center comes out clean.
  9. Remove the plumcake from the oven, let it cool for a few minutes in the mold, then transfer it to a wire rack to cool completely.

The term “plumcake” originally referred to an English dessert that included raisins (plum in Old English), but over time it has been adopted to indicate a variety of elongated-shaped baked sweets. It is not uncommon to find in Italy versions of the plumcake that include fruit like apples, adding a delicious touch and a moistness that makes it irresistible.

I suggest serving it with a dusting of powdered sugar or accompanied by a scoop of vanilla ice cream to make it even more indulgent.
