Preparation

  1. Start with the shortcrust pastry by placing the flour and cold butter in a bowl. Work quickly with your fingertips to get a sandy mixture.
  2. Add the powdered sugar, the pinch of salt, and the egg. Knead quickly until smooth. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  3. In the meantime, prepare the filling. Peel the apples, remove the cores, and slice them thinly. If you wish, sprinkle with a little lemon juice to prevent browning.
  4. In a bowl, beat the eggs with the sugar until frothy. Add the yogurt, cornstarch, grated lemon zest, and cinnamon. Mix well until the filling is smooth and homogeneous.
  5. Roll out the shortcrust pastry with a rolling pin on a floured surface, trying to create a thin disk that can cover a pie dish (preferably with a removable bottom).
  6. Transfer the pastry to the dish and prick the bottom with a fork. Arrange the apple slices evenly on the bottom and pour the yogurt mixture over them.
