Apple Cake with Oat Milk

If you’d like an Italian touch on this classic sweetness, we can think of adding some typically Italian ingredients, such as lemon zest for a citrusy fragrance or chopped almonds, which harmonize beautifully with apples. But let’s proceed with the basic recipe:

Ingredients

  • 300g of all-purpose flour
  • 200g of sugar
  • 100 ml of oat milk
  • 3 eggs
  • 3 medium apples
  • Zest of 1 organic lemon (optional)
  • 1 packet of baking powder
  • A pinch of salt
  • 100g of melted butter (or vegetable oil for a lighter version)
  • Ground cinnamon (to taste)
  • Chopped almonds (optional, for a crunchy touch)

Preparation

  1. Preheat the oven to 180°C.
  2. In a large bowl, beat the eggs with sugar until you get a frothy and light mixture.
  3. Add cooled melted butter or oil, oat milk, and mix well.
  4. Fold in the sifted flour with baking powder and a pinch of salt, mixing gently to avoid lumps.
  5. If desired, add the grated lemon zest and ground cinnamon to flavor the mixture.
  6. Peel the apples, remove the core and cut them into thin slices.
  7. Add the sliced apples to the mixture and, if you wish, the chopped almonds.
  8. Pour the mixture into a cake pan that has been previously buttered and floured (or lined with parchment paper).
  9. Bake in the oven for about 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  10. Let the apple cake cool before unmolding and serving.

If you don’t have oat milk, you can substitute it with other types of plant milk like almond or soy milk, or with traditional cow’s milk for those without dairy issues.
