Apple Pancakes

Apple pancakes are a delicious variant of classic pancakes and are perfect for a nutritious breakfast or a sweet snack. Here is the recipe with an Italian twist:

Ingredients

  • 150 g of all-purpose flour
  • 2 medium-sized apples
  • 2 eggs
  • 200 ml of milk
  • 30 g of granulated sugar
  • 1 pinch of salt
  • 1/2 packet of baking powder
  • 1 teaspoon of cinnamon (optional)
  • Butter as needed for cooking
  • Icing sugar for garnish (optional)

Preparation

  1. Start by peeling the apples and cutting them into small cubes.
  2. In a large bowl, mix the flour with the baking powder, sugar, cinnamon (if you want a spiced flavor), and a pinch of salt.
  3. Beat the eggs in another bowl and add the milk.
  4. Pour the mixture of eggs and milk into the bowl with the dry ingredients and mix well until you get a smooth and lump-free batter.
  5. Fold the apple cubes into the batter.
  6. Heat a non-stick pan and add a bit of butter.
  7. Pour a ladle of batter into the pan to form the pancake.
  8. Cook the pancake on medium-low heat for about 2-3 minutes or until bubbles form on the surface, then gently flip it and cook for another 2-3 minutes on the other side.
  9. Repeat the process until the batter is finished.
  10. Serve the pancakes warm, stacked, and if you like, dusted with icing sugar.

Curiosity

Pancakes are typical of North American cuisine, especially for breakfast, but by adding apples and cinnamon, you can give a touch of continental flair and familiarity for the Italian palate. Apples are widely used in Italy for the preparation of traditional desserts like apple cake.
