Apple Muffins
17/11/2023Apple muffins are a delicious sweet variant to enjoy for breakfast or as a snack. I present to you a classic version with an Italian twist.
Ingredients
- 2 medium apples, peeled and diced
- 250 g of all-purpose flour
- 150 g of granulated sugar
- 100 ml of milk
- 80 ml of seed oil or melted butter
- 2 eggs
- 1 sachet of baking powder for sweets
- 1 teaspoon of ground cinnamon
- 1 pinch of salt
- Icing sugar (optional, for decoration)
Preparation
- Preheat the oven to 180 °C and prepare a muffin tin by lining the individual compartments with paper liners.
- In a large bowl, mix the flour with the baking powder, cinnamon, and a pinch of salt.
- In another bowl, whisk the eggs with the sugar until you get a light and frothy mixture.
- Add the oil (or melted butter) and milk to the egg and sugar mixture, stirring well to blend the ingredients.
- Gradually incorporate the mixture of dry ingredients (flour, baking powder, cinnamon, salt), sifting them and mixing gently to avoid the formation of lumps.
- Add the diced apples to the batter and stir gently to distribute them evenly.
- Fill the paper liners up to ¾ of their height with the batter.
- Bake the muffins for about 20-25 minutes or until they are golden and a toothpick inserted into the center comes out clean.
- Remove the muffins from the oven and let them cool on a wire rack before serving. If desired, you can dust them with icing sugar before serving.
Curiosity
Apple muffins are extremely versatile. By adding a pinch of nutmeg or a handful of chopped walnuts, you can enrich their flavor and texture. For an even more Italian touch, try adding crumbled amaretto to the batter; it will give the muffins a surprising aroma!
