Apple Muffins

Apple muffins are a delicious sweet variant to enjoy for breakfast or as a snack. I present to you a classic version with an Italian twist.

Ingredients

  • 2 medium apples, peeled and diced
  • 250 g of all-purpose flour
  • 150 g of granulated sugar
  • 100 ml of milk
  • 80 ml of seed oil or melted butter
  • 2 eggs
  • 1 sachet of baking powder for sweets
  • 1 teaspoon of ground cinnamon
  • 1 pinch of salt
  • Icing sugar (optional, for decoration)

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the individual compartments with paper liners.
  2. In a large bowl, mix the flour with the baking powder, cinnamon, and a pinch of salt.
  3. In another bowl, whisk the eggs with the sugar until you get a light and frothy mixture.
  4. Add the oil (or melted butter) and milk to the egg and sugar mixture, stirring well to blend the ingredients.
  5. Gradually incorporate the mixture of dry ingredients (flour, baking powder, cinnamon, salt), sifting them and mixing gently to avoid the formation of lumps.
  6. Add the diced apples to the batter and stir gently to distribute them evenly.
  7. Fill the paper liners up to ¾ of their height with the batter.
  8. Bake the muffins for about 20-25 minutes or until they are golden and a toothpick inserted into the center comes out clean.
  9. Remove the muffins from the oven and let them cool on a wire rack before serving. If desired, you can dust them with icing sugar before serving.

Curiosity

Apple muffins are extremely versatile. By adding a pinch of nutmeg or a handful of chopped walnuts, you can enrich their flavor and texture. For an even more Italian touch, try adding crumbled amaretto to the batter; it will give the muffins a surprising aroma!
