Apple Ciambella

Ingredients
- 2 large apples
- 250 g of 00 flour
- 200 g of sugar
- 3 eggs
- 100 ml of vegetable oil
- 1 packet of baking powder
- Grated zest of 1 lemon
- A pinch of salt
- Icing sugar (for decoration)
Preparation
- Preheat the oven to 180 °C (350 °F).
- Peel the apples, remove the core and cut them into small cubes.
- In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
- Add the oil slowly, continuing to mix.
- Incorporate the sifted flour a little at a time, mixing gently to avoid lumps.
- Add the baking powder, grated lemon zest and a pinch of salt to the mixture.
- Fold in the apple cubes into the batter, mixing gently to distribute them evenly.
- Grease and flour a ciambella pan, or use a non-stick spray if you prefer.
- Pour the batter into the pan and level it with a spatula.
- Bake in the oven for about 40-45 minutes or until a toothpick inserted into the ciambella comes out clean.
- Remove the ciambella from the oven and let it cool on a wire rack.
- Once cooled, dust it with icing sugar before serving.
