Apple Ciambella

Ingredients

  • 2 large apples
  • 250 g of 00 flour
  • 200 g of sugar
  • 3 eggs
  • 100 ml of vegetable oil
  • 1 packet of baking powder
  • Grated zest of 1 lemon
  • A pinch of salt
  • Icing sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Peel the apples, remove the core and cut them into small cubes.
  3. In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy.
  4. Add the oil slowly, continuing to mix.
  5. Incorporate the sifted flour a little at a time, mixing gently to avoid lumps.
  6. Add the baking powder, grated lemon zest and a pinch of salt to the mixture.
  7. Fold in the apple cubes into the batter, mixing gently to distribute them evenly.
  8. Grease and flour a ciambella pan, or use a non-stick spray if you prefer.
  9. Pour the batter into the pan and level it with a spatula.
  10. Bake in the oven for about 40-45 minutes or until a toothpick inserted into the ciambella comes out clean.
  11. Remove the ciambella from the oven and let it cool on a wire rack.
  12. Once cooled, dust it with icing sugar before serving.
