Apple Crepe Cake

Ingredients

For the crepes:

  • 250 ml of milk
  • 100 g of flour
  • 2 eggs
  • 20 g of melted butter
  • A pinch of salt

For the filling:

  • 4 apples (Golden or Renette, based on your preference)
  • Juice of 1/2 lemon
  • 50 g of sugar
  • 30 g of butter
  • 1 teaspoon of ground cinnamon
  • A pinch of nutmeg (optional)

For finishing:

  • Powdered sugar (for dusting)

Preparation

  1. In a bowl, mix the flour and salt. Create a well in the center and add the eggs. Start mixing incorporating the flour a little at a time.
  2. Heat the milk until it is lukewarm and gradually add it to the mixture, stirring constantly to avoid lumps.
  3. Add the melted butter and let the batter rest for about 30 minutes in the refrigerator.
  4. In the meantime, peel the apples, remove the core, and slice them thinly. Place them in a pan with the butter, sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat until the apples are soft but not falling apart.
  5. Heat a crepe pan or a non-stick pan and pour a ladle of batter, moving the pan to distribute the liquid evenly. Cook the crepe until the edges start to peel off and flip it to cook the other side.
  6. Repeat the process with the rest of the batter, stacking the crepes on a plate.
  7. Once all the crepes are ready, distribute the apple filling on one crepe and cover it with another, as if you were making a mille-feuille. Continue to layer until all ingredients are used up.
  8. Dust with powdered sugar before serving.
