Ingredients
For the crepes:
- 250 ml of milk
- 100 g of flour
- 2 eggs
- 20 g of melted butter
- A pinch of salt
For the filling:
- 4 apples (Golden or Renette, based on your preference)
- Juice of 1/2 lemon
- 50 g of sugar
- 30 g of butter
- 1 teaspoon of ground cinnamon
- A pinch of nutmeg (optional)
For finishing:
- Powdered sugar (for dusting)
Preparation
- In a bowl, mix the flour and salt. Create a well in the center and add the eggs. Start mixing incorporating the flour a little at a time.
- Heat the milk until it is lukewarm and gradually add it to the mixture, stirring constantly to avoid lumps.
- Add the melted butter and let the batter rest for about 30 minutes in the refrigerator.
- In the meantime, peel the apples, remove the core, and slice them thinly. Place them in a pan with the butter, sugar, lemon juice, cinnamon, and nutmeg. Cook over medium heat until the apples are soft but not falling apart.
- Heat a crepe pan or a non-stick pan and pour a ladle of batter, moving the pan to distribute the liquid evenly. Cook the crepe until the edges start to peel off and flip it to cook the other side.
- Repeat the process with the rest of the batter, stacking the crepes on a plate.
- Once all the crepes are ready, distribute the apple filling on one crepe and cover it with another, as if you were making a mille-feuille. Continue to layer until all ingredients are used up.
- Dust with powdered sugar before serving.
