Mascarpone Apple Cake

The mascarpone apple cake is a delicious variation of the classic homemade sweet. Here is the recipe with all the steps:

Ingredients

  • 3 large apples
  • 250 g of all-purpose flour
  • 100 g of sugar (plus a bit more for dusting)
  • 100 g of softened butter (room temperature)
  • 250 g of mascarpone
  • 3 eggs
  • 1 packet of baking powder
  • 1 lemon (zested)
  • 1 pinch of salt
  • Powdered sugar (for decoration)
  • Ground cinnamon (optional)

Preparation

  1. Preheat the oven to 180°C.
  2. In a bowl, whip the butter with the sugar using an electric mixer or a spatula until the mixture is light and fluffy.
  3. Add the eggs one at a time, incorporating them well into the previous mixture.
  4. Add the mascarpone to the mixture and stir until it becomes smooth.
  5. Add the grated lemon zest and a pinch of salt.
  6. Sift the flour and baking powder and gently fold into the mixture with movements from the bottom up to avoid deflating the batter.
  7. Peel the apples, remove the core, and cut them into not too thin slices. If you like, you can sprinkle them with a bit of lemon juice to prevent browning.
  8. Pour half of the batter into a previously buttered and floured pan (or lined with parchment paper).
  9. Arrange a portion of the apple slices on top, and if you like, sprinkle with some cinnamon.
  10. Cover with the remaining batter and complete with another layer of apples. Dust the apples with some sugar and cinnamon.
  11. Bake in the oven for about 40-45 minutes or until a skewer inserted in the center of the cake comes out clean.
  12. Let the mascarpone apple cake cool before removing it from the mold.
  13. Before serving, sprinkle the surface with powdered sugar for a more elegant effect.

Remember to check the cake with a skewer because every oven is different and times may vary slightly.

Curiosity

Mascarpone is a creamy Italian cheese, typical of Lombardy, often used in pastry making for the creation of desserts like tiramisu. Thanks to its soft texture and delicate taste, mascarpone adds a creamy and rich note to the preparations in which it is included, making this apple cake particularly moist and inviting.
