Mascarpone Apple Cake

Ingredients
- 3 large apples
- 250 g of all-purpose flour
- 100 g of sugar (plus a bit more for dusting)
- 100 g of softened butter (room temperature)
- 250 g of mascarpone
- 3 eggs
- 1 packet of baking powder
- 1 lemon (zested)
- 1 pinch of salt
- Powdered sugar (for decoration)
- Ground cinnamon (optional)
Preparation
- Preheat the oven to 180°C.
- In a bowl, whip the butter with the sugar using an electric mixer or a spatula until the mixture is light and fluffy.
- Add the eggs one at a time, incorporating them well into the previous mixture.
- Add the mascarpone to the mixture and stir until it becomes smooth.
- Add the grated lemon zest and a pinch of salt.
- Sift the flour and baking powder and gently fold into the mixture with movements from the bottom up to avoid deflating the batter.
- Peel the apples, remove the core, and cut them into not too thin slices. If you like, you can sprinkle them with a bit of lemon juice to prevent browning.
- Pour half of the batter into a previously buttered and floured pan (or lined with parchment paper).
- Arrange a portion of the apple slices on top, and if you like, sprinkle with some cinnamon.
- Cover with the remaining batter and complete with another layer of apples. Dust the apples with some sugar and cinnamon.
- Bake in the oven for about 40-45 minutes or until a skewer inserted in the center of the cake comes out clean.
- Let the mascarpone apple cake cool before removing it from the mold.
- Before serving, sprinkle the surface with powdered sugar for a more elegant effect.
