Apple and Yogurt Plumcake

The apple and yogurt plumcake is a soft and moist variant of the classic plumcake. Here is the recipe:

Ingredients

  • 250g of all-purpose flour
  • 200g of sugar
  • 125g of white yogurt (plain or vanilla-flavored)
  • 80ml of seed oil (or light olive oil)
  • 3 eggs
  • 2 medium apples
  • grated zest of 1 lemon
  • 1 packet of baking powder
  • a pinch of salt
  • cinnamon powder (optional)

Preparation

  1. Preheat the oven to 180 °C and line a plumcake tin with parchment paper or grease and flour it.
  2. Peel the apples, remove the cores, and cut them into small cubes. If desired, add a bit of cinnamon to flavor them.
  3. In a large bowl, beat the eggs with the sugar until you obtain a light and fluffy mixture.
  4. Add the yogurt and mix well to incorporate it.
  5. Mix in the oil and grated lemon zest, stirring to blend the ingredients together.
  6. In another bowl, sift the flour with the baking powder and a pinch of salt, then add these dry ingredients to the wet mixture, stirring to avoid lumps.
  7. Finally, gently fold the apple cubes into the batter.
  8. Pour the batter into the prepared tin and level it with a spatula.
  9. Bake for about 40-45 minutes, or until a toothpick inserted into the center of the plumcake comes out clean.
  10. Once baked, let the plumcake cool in the tin for about 15 minutes, then transfer it to a wire rack to finish cooling.

Curiosity

Despite its name, plumcake does not necessarily contain plums (“plum” in English). The term comes from the British practice of using this fruit in their cakes, but over time the word has become synonymous with a variety of rectangular baked cakes. The addition of yogurt to the recipe not only provides softness, but also adds a slight tartness that balances the sweetness of the apples.
