Apple and Walnut Tart

The apple and walnut tart is an exquisite dessert that combines the sweetness of apples with the crunchiness of walnuts inside a shell of shortcrust pastry. Here’s the recipe to prepare an apple and walnut tart:

Ingredients

  • Shortcrust pastry:
    • 300 grams of 00 flour
    • 150 grams of cold butter, cubed
    • 120 grams of sugar
    • 1 large egg
    • 1 egg yolk
    • Grated zest of 1 lemon
  • Filling:
    • 3 large apples (typical Italian variant: Renetta apples)
    • 100 grams of chopped walnuts
    • 100 grams of sugar
    • 30 grams of butter
    • 1 teaspoon of ground cinnamon
    • 1 tablespoon of honey (wildflower or acacia)
    • 1 tablespoon of rum (optional)

Preparation

  1. Start by preparing the shortcrust pastry by mixing flour and sugar in a large bowl. Add the cold butter cubes and quickly work the mixture with your fingertips until you get a “sandy” appearance.
  2. Add the egg and yolk, and lemon zest, then knead until you obtain a homogeneous dough. Form a ball, wrap it in cling film and let it rest in the fridge for at least 30 minutes.
  3. Meanwhile, prepare the filling: peel the apples, remove the cores and cut them into thin slices. In a skillet, melt the butter and add the apples, sugar, cinnamon, and honey. Cook over medium heat until the apples are soft. If you wish, you can add rum towards the end of cooking.
  4. Preheat the oven to 180°C.
  5. Roll out the shortcrust pastry into an even layer and line a previously buttered and floured tart pan, making a small edge on the pan.
  6. Spread the cooked apple filling on the pastry and sprinkle with the chopped walnuts.
  7. If you have leftover shortcrust pastry, you can make strips or shapes to arrange on top of the filling.
  8. Bake the tart for about 30-35 minutes or until the pastry is golden.
  9. Let it cool before serving.

This tart is a dessert very much appreciated in Italy, especially during autumn and winter, when apples and walnuts are in season. Regional variants include the use of apples and local products, such as Sorrentino walnuts or apples from the Trentino Valleys.
