Apple and Raisin Fritters

Here is the recipe for preparing delicious Italian-style apple and raisin fritters.

Ingredients

  • 2 large apples
  • 100 g of raisins
  • 200 g of flour
  • 2 eggs
  • 100 ml of milk
  • 50 g of sugar
  • 1 teaspoon of baking powder for sweets
  • A pinch of salt
  • Powdered sugar as needed (for garnish)
  • Grated zest of 1 lemon (optional)
  • 1 teaspoon of ground cinnamon (optional)
  • Seed oil for frying

Preparation

  1. Start by soaking the raisins in warm water for about 20 minutes to hydrate them and make them soft.
  2. In the meantime, peel the apples, remove the core and cut them into small cubes.
  3. In a bowl, sift the flour and mix with the sugar, baking powder, the pinch of salt, and if you like, the grated lemon zest and cinnamon to add more flavor.
  4. Beat the eggs and add them to the flour mixture. Also gradually incorporate the milk, stirring to obtain a smooth, lump-free batter.
  5. Drain the raisins and add them to the batter along with the apple cubes.
  6. Heat the oil in a deep pan or fryer. The oil is ready when, dipping the handle of a wooden spoon in it, bubbles form around it.
  7. With a spoon, take portions of the batter and gently pour them into the hot oil, frying them until the fritters are golden brown and puffed up, turning once to cook evenly.
  8. Once cooked, drain the fritters on paper towels to remove excess oil.
  9. Dust the still warm fritters with powdered sugar before serving.

You can serve the apple and raisin fritters as a quick dessert after a meal or for a tasty snack. They are perfect with a dusting of powdered sugar or, if you want to add a special touch, with a drizzle of honey or maple syrup.
