Apple and Mascarpone Cake

Ingredients
- 3 medium apples
- 250 g of mascarpone
- 3 eggs
- 150 g of sugar
- 200 g of type 00 flour
- 1 packet of baking powder
- 1 pinch of salt
- Icing sugar (for decoration)
- Cinnamon (optional)
Preparation
- Preheat the oven to 180 °C and grease or line with parchment paper a cake tin.
- Peel the apples, remove the cores, and slice them thinly. If desired, you can sprinkle them with some cinnamon.
- In a bowl, work the mascarpone with the sugar until you obtain a smooth cream.
- Add the eggs one at a time, making sure to incorporate each egg well before adding the next.
- Sift the flour, baking powder, and salt and add them to the egg and mascarpone mixture, mixing until you get a homogenous dough.
- Pour half of the batter into the cake tin, arrange the apple slices on top and cover with the remaining batter.
- Bake the cake for about 40 minutes or until a toothpick inserted in the center comes out clean.
- Let the cake cool down before unmolding it and dust it with icing sugar for decoration.
