Apple and Mascarpone Cake

Ingredients

  • 3 medium apples
  • 250 g of mascarpone
  • 3 eggs
  • 150 g of sugar
  • 200 g of type 00 flour
  • 1 packet of baking powder
  • 1 pinch of salt
  • Icing sugar (for decoration)
  • Cinnamon (optional)

Preparation

  1. Preheat the oven to 180 °C and grease or line with parchment paper a cake tin.
  2. Peel the apples, remove the cores, and slice them thinly. If desired, you can sprinkle them with some cinnamon.
  3. In a bowl, work the mascarpone with the sugar until you obtain a smooth cream.
  4. Add the eggs one at a time, making sure to incorporate each egg well before adding the next.
  5. Sift the flour, baking powder, and salt and add them to the egg and mascarpone mixture, mixing until you get a homogenous dough.
  6. Pour half of the batter into the cake tin, arrange the apple slices on top and cover with the remaining batter.
  7. Bake the cake for about 40 minutes or until a toothpick inserted in the center comes out clean.
  8. Let the cake cool down before unmolding it and dust it with icing sugar for decoration.
