Ingredients

  • 3 medium apples
  • 200 g of all-purpose flour
  • 100 g of sugar
  • 2 eggs
  • 50 g of melted butter
  • 1 sachet of baking powder
  • 1 pinch of salt
  • Apricot jam or other to taste (about 4 tablespoons)
  • Icing sugar for decorating
  • Lemon juice
  • Cinnamon (optional)

Preparation

  1. Start by peeling the apples, removing the core, and slicing them thinly. Soak them in water with lemon juice to prevent browning.
  2. In a bowl, beat the eggs with the sugar until you get a fluffy and frothy mixture.
  3. Add the cooled melted butter and a pinch of salt; continue mixing.
  4. Combine the sifted flour and baking powder, folding them gently into the mixture.
  5. Butter and flour a baking pan, or line it with parchment paper.
  6. Pour half of the batter into the pan.
  7. Arrange a layer of apple slices on the batter and sprinkle with a bit of cinnamon if you wish to add this flavor.
  8. Add a few dollops of jam over the apples.
  9. Cover with the remaining batter and finish with another layer of apples (and cinnamon if used).
  10. Bake in a preheated oven at 180 °C for about 40 minutes or until golden brown and the doneness is verified with a toothpick.
