Apple and caramel tart
17/11/2023The apple and caramel tart is a classic dessert that combines the sweetness of fruit with the indulgence of caramel, in a crunchy shortcrust pastry base. Here is the recipe to prepare this delicious cake:
Ingredients
For the shortcrust pastry:
- 300 g of type 00 flour
- 150 g of cold butter, diced
- 150 g of sugar
- 1 large egg
- 1 pinch of salt
- Grated zest of 1 lemon
For the apple filling:
- 4 large apples (such as Golden or Fuji)
- Juice of 1 lemon
- 2 tablespoons of brown sugar
- 1 teaspoon of ground cinnamon
For the caramel:
- 100 g of granulated sugar
- 50 g of butter
- 100 ml of fresh cream
Preparation
- Start with the shortcrust pastry: in a bowl, mix the flour and sugar. Add the diced butter and start to work with your fingers until the mixture becomes sandy.
- Add the egg, salt, and grated lemon zest, quickly kneading until you obtain a homogeneous ball. Wrap it in cling film and let it rest in the refrigerator for at least 30 minutes.
- In the meantime, prepare the apples: peel them, remove the core, and cut them into thin slices. Place them in a bowl with the lemon juice, brown sugar, and cinnamon.
- For the caramel: in a saucepan, melt the sugar over moderate heat until it becomes golden. Carefully add the butter and stir until it melts completely. Pour the cream (be careful of splashes) and stir until a smooth cream is obtained. Remove from heat and let it cool down.
- Take the shortcrust pastry, roll out a thin disk and lay it in a previously buttered and floured pan, creating an edge. Prick the bottom with a fork and pour the apples in, spreading them evenly.
- Pour the caramel over the apples and bake in a preheated oven at 180°C for about 40 minutes, or until the pastry is golden and the apples are soft.
- Remove the tart from the oven and let it cool before serving.
