Apple and Blackberry Cake

The apple and blackberry cake is a delicious dessert that combines the sweetness of apples with the aroma of blackberries, creating the perfect blend. Here is the recipe:

Ingredients

  • 2-3 apples (depending on size)
  • 150 g of blackberries
  • 200 g of all-purpose flour
  • 150 g of granulated sugar
  • 100 g of butter at room temperature
  • 3 eggs
  • 1 packet of baking powder
  • 1 pinch of salt
  • The grated zest of 1 lemon
  • Powdered sugar (for decoration)

Preparation

  1. Preheat the oven to 180 °C (350 °F).
  2. Clean the apples by cutting them into thin slices after peeling them. If you prefer, you can also leave the skin on for a rustic touch.
  3. In a large mixing bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs, one at a time, making sure each is well incorporated before adding the next.
  4. Add the sifted flour with baking powder, the grated lemon zest, and a pinch of salt.
  5. Mix until just combined.
  6. Gently fold in the sliced apples and blackberries, being careful not to crush the berries.
  7. Pour the mixture into a buttered and floured cake tin or lined with parchment paper.
  8. Bake in the oven for about 45 minutes or until a toothpick inserted in the center of the cake comes out clean.
  9. Allow the cake to cool on a wire rack before dusting with powdered sugar for decoration.

The apple and blackberry cake can be served warm or at room temperature, perhaps accompanied by a scoop of vanilla ice cream for an extra touch of indulgence.

Curiosity

This cake combines the tradition of country-style apple cakes with the freshness and tanginess of blackberries, typically harvested at the end of summer. In Italy, especially in the north where blackberries are abundant in the woods, it is easy to find homemade variations of this recipe that celebrate the seasonal fruit.
