Apple and Almond Cookies

Apple and almond cookies are a delicious and relatively simple dessert to make. Here’s how to do it:

Ingredients

  • 200 g of flour
  • 100 g of soft butter
  • 80 g of sugar
  • 1 egg
  • 1 large apple (better if sour, like Granny Smith)
  • 50 g of finely chopped almonds
  • 1/2 teaspoon of baking powder
  • 1 pinch of salt
  • Icing sugar (optional, for decoration)
  • 1/2 teaspoon of cinnamon (optional, for a spicy touch)

Preparation

  1. In a large bowl, blend the flour with the soft butter until you get a sandy mixture.

  2. Add the sugar, egg, pinch of salt, and cinnamon if you want a spicy flavor. Work the ingredients until you get a smooth and homogeneous dough.

  3. Incorporate the finely chopped almonds into the dough.

  4. Peel the apple, remove the core, and grate it finely or cut it into very small pieces. If you prefer, you can pre-cook it briefly in a pan with a little butter or water and a bit of sugar to soften it.

  5. Add the grated apple (and cooled, if pre-cooked) to the dough and mix well.

  6. Pre-heat the oven to 180 °C.

  7. Form small mounds of dough with your hands or use two teaspoons to place them on a baking tray lined with parchment paper, leaving some space between them.

  8. Bake in the oven for about 15-20 minutes or until the cookies are golden and slightly crispy.

  9. Remove the cookies from the oven and let them cool on a rack.

  10. If you wish, before serving, you can dust the cookies with icing sugar to decorate them.
