The savory anchovy tart is a tasty dish that combines the flavor of the sea with the convenience of a rustic pie. Here’s the recipe:

Ingredients

  • 1 roll of puff pastry or shortcrust pastry
  • 300 g of fresh, cleaned anchovies
  • 1 large onion
  • 2 tablespoons of desalted capers
  • Black olives (to taste)
  • 200 g of cherry tomatoes
  • Breadcrumbs (to taste)
  • Extra virgin olive oil
  • Salt and pepper (as needed)
  • Chopped parsley (optional)

Preparation

  1. Preheat the oven to 180 °C.
  2. Roll out the puff pastry or shortcrust onto a round baking dish, previously greased or lined with parchment paper. Prick the bottom with a fork.
  3. In a skillet, sauté the finely chopped onion with a drizzle of extra virgin olive oil until it becomes transparent.
  4. Add the cleaned anchovies to the skillet with the onions and cook them for a few minutes over medium heat until they break apart easily.
  5. Add the halved cherry tomatoes, capers, and olives, then sauté everything for a few minutes in the skillet to flavor. Season with salt and pepper to your taste.
  6. Spread the mixture of anchovies and vegetables over the puff or shortcrust pastry base.
  7. Sprinkle with breadcrumbs, which will help absorb moisture and add crunchiness to the surface.
  8. Bake the savory tart for 20-25 minutes or until the pastry is golden and crispy.
  9. Once cooked, allow to rest for a few minutes before serving. If you like, you can add some fresh chopped parsley for a touch of color and freshness.
