Pasta with Anchovies and Olives

Ingredients

  • 320 g of pasta (linguine or spaghetti work well)
  • 100 g of anchovies in oil
  • 100 g of pitted black olives
  • 2 cloves of garlic
  • Extra virgin olive oil to taste
  • Chili pepper (optional)
  • Chopped fresh parsley
  • Salt to taste

Preparation

  1. Bring plenty of water to a boil in a large pot, and once boiling, salt it and throw in the pasta.

  2. In the meantime, in a large enough frying pan, sauté peeled garlic cloves (whole if you want to remove them easily or minced if you prefer to leave them in the dish) in extra virgin olive oil. If you like, you can also add chopped chili pepper for a spicy touch.

  3. When the garlic is golden, remove it if you left it whole, and add the anchovies in oil. Let them melt over low heat, helping with a fork.

  4. Cut the pitted black olives into rings and add them to the pan with the anchovies. Let flavor for a few minutes.

  5. Drain the pasta al dente and transfer it to the pan with the anchovy and olive sauce. Sauté for a few minutes to blend the ingredients well.

  6. Sprinkle with chopped fresh parsley before serving.
