American Potatoes with Cheddar and Bacon

The American potatoes with cheddar and bacon are a hearty and flavorful dish that can be served either as a side dish or as a main course. Here is the recipe to prepare this tasty dish.

Ingredients

  • 4 medium-sized American (sweet) potatoes
  • 150 g of diced bacon
  • 150 g of grated cheddar cheese
  • 2 tablespoons of extra virgin olive oil
  • 1 small onion, finely chopped
  • Salt and pepper to taste
  • Chopped chives, for garnish (optional)

Preparation

  1. Preheat the oven to 200 °C.
  2. Thoroughly wash the American potatoes and dry them. With a fork, pierce the skin of the potatoes in several places.
  3. Wrap each potato in aluminum foil and bake them for about 45 minutes or until they become tender to the touch.
  4. In the meantime, heat a pan over medium heat and cook the bacon cubes until they become crispy. Remove them and set aside on a plate lined with paper towels.
  5. In the same pan, add the chopped onion and cook with the olive oil until it turns golden and soft.
  6. Once baked, remove the potatoes from the oven and be careful not to burn yourself when removing the aluminum. Cut the potatoes in half lengthwise and carefully scoop out some of the flesh to create a sort of “boat.”
  7. Mash the removed potato flesh and mix it with the sautéed onion, crispy bacon, and half of the cheddar cheese. Season with salt and pepper to your taste.
  8. Fill the potato skins with the mixture, sprinkle with the remaining cheddar, and bake again for about 10 minutes, or until the cheese has melted and turned a light golden color.
  9. Garnish with chopped chives before serving, if desired.
