American Cookies with Chocolate Chips and Peanuts

Ingredients

  • 225 g of unsalted butter, at room temperature
  • 150 g of brown sugar
  • 100 g of granulated sugar
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 300 g of pastry flour (00)
  • 1/2 teaspoon of baking soda
  • 1/2 teaspoon of salt
  • 200 g of dark or milk chocolate chips
  • 100 g of salted peanuts, coarsely chopped

Preparation

  1. Preheat the oven to 180 °C and line a baking sheet with parchment paper.

  2. In a bowl, mix the flour with the baking soda and salt. Set aside.

  3. In a large bowl, use an electric mixer to beat the butter with the brown sugar and granulated sugar until the mixture is light and fluffy, about 3-5 minutes. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

  4. Add the dry ingredients previously prepared to the butter and sugar mixture, and mix until just incorporated. Do not overbeat.

  5. Fold in the chocolate chips and chopped peanuts with a spatula or wooden spoon.

  6. Use an ice cream scoop or two spoons to portion the dough onto the prepared baking sheet, leaving space between each cookie as they will spread during baking.

  7. Bake for 10-12 minutes, or until the edges of the cookies are golden but the centers remain soft.

  8. Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to complete the cooling.
