Amaretti with Sour Cherries in Syrup

Ingredients

  • 200 g of peeled almonds
  • 200 g of granulated sugar
  • 2 egg whites
  • Grated zest of 1 lemon (untreated)
  • 1 teaspoon of vanilla extract
  • Powdered sugar, as needed
  • Candied sour cherries, to taste
  • Sour cherry syrup, to taste

Preparation

  1. Preheat the oven to 170 °C (338 °F) and prepare a baking sheet by lining it with parchment paper.
  2. Finely grind the almonds in a food processor until you get a flour. If you don’t have peeled almonds, you can blanch them in boiling water for a few minutes and then remove the skin.
  3. In a bowl, combine the almond flour with the granulated sugar.
  4. In another bowl, beat the egg whites with a pinch of salt until stiff.
  5. Gently fold the beaten egg whites into the almond and sugar mixture, being careful not to deflate them.
  6. Add the grated lemon zest and vanilla extract, and mix until you obtain a homogeneous dough.
  7. Using two teaspoons or a piping bag, form small quenelles of the mixture and place them on the baking sheet, leaving some space between each one.
  8. Press a candied cherry into the center of each amaretto, slightly embedding it.
  9. Bake for about 15-20 minutes or until the amaretti are slightly golden.
  10. Once ready, let them cool on the baking sheet.
  11. Before serving, sprinkle the amaretti with powdered sugar and drizzle with a little sour cherry syrup to intensify the flavor.
