Cherry Semifreddo

Cherry semifreddo is a delicious and cool dessert, perfect to sweetly conclude a meal. Here’s the recipe for preparing cherry semifreddo:

Ingredients

  • 200 g of syrup-soaked cherries
  • 3 egg yolks
  • 100 g of sugar
  • 250 ml of fresh cream to whip
  • 100 ml of cherry syrup
  • Crushed amaretti biscuits to taste for the base

Preparation

  1. In a small pot, heat the cherry syrup until it becomes slightly thicker. Then allow it to cool.
  2. In a bowl, beat the yolks with the sugar until you have a frothy and light mixture. You can use an electric mixer or a stand mixer.
  3. Whip the cream in another bowl until it is firm.
  4. Gently combine the whipped cream with the yolk and sugar mixture, trying not to deflate everything.
  5. Add the cooled cherry syrup to the mixture and mix gently.
  6. Line a plumcake mold with cling film, then sprinkle the bottom with the crushed amaretti biscuits.
  7. Pour half of the mixture over the amaretti, arrange a layer of syrup-soaked cherries, and cover with the rest of the mixture.
  8. Level the surface and cover with another layer of crushed amaretti biscuits. Cover the mold with cling film and put in the freezer for at least 4-6 hours.
  9. Before serving, remove the semifreddo from the freezer and let it rest for about 10 minutes at room temperature. Then, unmold the semifreddo onto a serving plate and garnish with more syrup-soaked cherries.

For a truly Italian touch, I suggest garnishing the semifreddo with flakes of dark chocolate or a dusting of cocoa, to enhance the taste of the cherries and add a crunchy texture that contrasts with the softness of the dessert.
