Amaretti Cake

Ingredients

  • 200 g of amaretti biscuits
  • 100 g of sugar
  • 100 g of soft butter
  • 3 eggs
  • 100 g of type 00 flour
  • 1 packet of baking powder
  • Powdered sugar (for sprinkling)
  • A pinch of salt

(Optional for an extra touch)

  • 1 tablespoon of amaretto liqueur
  • Almond flakes or chopped almonds for decoration

Preparation

  1. Preheat the oven to 180 °C.
  2. Finely chop the amaretti in a mixer until they are reduced to powder.
  3. In a bowl, whip the soft butter with the sugar until you get a frothy and light mixture.
  4. Separate the yolks from the whites. Add the yolks one at a time to the butter and sugar mixture, incorporating them well after each addition.
  5. Add the amaretti powder to the mixture and mix gently.
  6. In another bowl, whip the egg whites with a pinch of salt until they are firm.
  7. Add the whipped egg whites to the mixture, alternating with the sifted flour and baking powder, mixing from the bottom up to not deflate the mixture.
  8. (Optional) Incorporate the amaretto liqueur for a more intense scent and flavor.
  9. Pour the mixture into a buttered and floured mold, or lined with parchment paper.
  10. (Optional) Sprinkle the surface of the cake with almond flakes or chopped almonds.
  11. Bake and cook for about 30-35 minutes, or until a toothpick inserted in the center of the cake comes out clean.
  12. Let the cake cool, then unmold it and dust it with powdered sugar before serving.
