Amaranth Muffins

Amaranth muffins are an excellent choice for a healthy breakfast or a nutritious snack, thanks to the virtues of amaranth, which is a pseudocereal rich in protein and essential amino acids. Here is a basic recipe:

Ingredients

  • 200 grams of amaranth flour
  • 100 grams of brown sugar (or another sweetener of choice)
  • 2 eggs
  • 80 ml of seed oil (or another oil of choice, like coconut oil)
  • 120 ml of milk (you can substitute it with almond milk or another vegetable milk if you want)
  • 1 sachet of baking powder for cakes
  • A pinch of salt
  • (Optional) add-ins of your choice: nuts, chocolate chips, goji berries, fruit pieces, etc.

Preparation

  1. Preheat the oven to 180 °C.
  2. In a bowl, mix the amaranth flour with the baking powder, the brown sugar, and a pinch of salt.
  3. In another bowl, beat the eggs with the oil and milk, then add these liquid components to the dry ingredients.
  4. Mix until you obtain a smooth batter. If you wish, add the optional ingredients such as nuts or chocolate chips now.
  5. Fill the muffin tins two-thirds full and bake in the preheated oven for about 20 minutes or until a toothpick inserted in the center of a muffin comes out clean.
  6. Let the muffins cool on a rack before serving.

Amaranth was considered a staple food in the diet of the Aztecs and the Maya. It is known for its high nutritional properties and being a good source of fiber. As it is not a true cereal but a seed, it is naturally gluten-free, making your muffins suitable also for those following a gluten-free diet.
