Amalfi-style Stuffed Squid

Ingredients

  • 4 medium-sized squids, cleaned
  • 100 g of stale bread
  • 50 g of salted capers
  • 30 g of pitted Gaeta black olives
  • 2 cloves of garlic
  • Parsley to taste
  • 1 egg
  • 100 g of grated Parmesan cheese
  • 200 g of tomato pulp
  • Extra virgin olive oil to taste
  • Salt and pepper to taste

Preparation

  1. Start by preparing the filling: place the stale bread in a bowl and moisten it slightly with water or milk to soften it. Once softened, squeeze the bread and place it in a large bowl.

  2. Finely chop the capers after desalting them under running water, the olives, and the garlic, then add everything to the bread along with chopped parsley, the egg, the grated Parmesan, salt, and pepper. Mix everything well until you have a homogeneous blend.

  3. Take the cleaned squids and stuff the sac with the prepared filling, but do not fill it completely to prevent the stuffing from coming out during cooking. Close the opening with a toothpick.

  4. In a large pan, heat a thread of oil and a clove of garlic. When the garlic is golden, remove it and carefully place the stuffed squids.

  5. Brown the squids on both sides, then add the tomato pulp, lower the flame, and cook with the lid on for about 20-30 minutes. If necessary, add a little water to prevent the sauce from drying out too much.

  6. At the end of cooking, adjust with salt and pepper and sprinkle with some chopped fresh parsley.

Serve the squids hot, accompanied by their cooking sauce.
