Almond and Lemon Cookies

Ingredients

  • 200 g of all-purpose flour
  • 100 g of almond meal (almond flour)
  • 100 g of sugar
  • 100 g of butter at room temperature
  • Grated zest of 1 organic lemon
  • 1 large egg
  • 1/2 teaspoon of baking powder
  • A pinch of salt

Preparation

  1. Preheat the oven to 180 °C and prepare a baking sheet by lining it with parchment paper.

  2. In a large bowl, combine the all-purpose flour, almond meal, sugar, baking powder, and salt.

  3. Add the grated lemon zest to the dry ingredients mix and stir well to distribute the aroma.

  4. Incorporate the butter in small pieces and start working the mixture with your hands or with a mixer fitted with paddle attachments to obtain a sandy compound.

  5. Add the egg and continue to work the dough until it forms into a compact and homogeneous mass.

  6. Take small portions of dough and form into walnut-sized balls, then slightly flatten them to give the cookies a round and flattened shape.

  7. Arrange the cookies on the prepared baking sheet, leaving a bit of space between each one.

  8. Bake the cookies for about 10-15 minutes or until they are lightly golden.

  9. Remove the cookies from the oven and let them cool on a wire rack.

  10. Once cooled, you can dust them with powdered sugar for a sweet and decorative finish.
