Almond and Jam Cookies
17/11/2023Almond cookies with jam are a delightful treat perfect for any time of the day, especially to accompany tea or coffee. The aroma of almonds blends wonderfully with the sweetness of the jam. Here is the recipe to make them:
Ingredients
- 200 g of type 00 flour
- 100 g of ground almonds
- 100 g of butter at room temperature
- 80 g of powdered sugar
- 1 egg
- A pinch of salt
- Grated zest of 1 lemon
- Jam of your choice for filling (it can be apricot, strawberry, cherry, or another flavor you like)
Preparation
- In a bowl, mix the flour with the ground almonds and a pinch of salt.
- In another bowl, cream the butter with the powdered sugar until you have a homogenous and fluffy mixture.
- Add the egg and grated lemon zest to the butter and sugar mixture and mix well.
- Gradually incorporate the flour and almond mix into the wet ingredients until the dough becomes smooth.
- Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
- Preheat the oven to 180 °C.
- Roll out the dough on a lightly floured surface until it’s about 3-5 mm thick.
- Use a cookie cutter to cut out the cookies. If you want to make the classic cookies with a window on top, use a smaller cookie cutter to cut out the center of half the cookies obtained.
- Arrange the cookies on a baking sheet lined with parchment paper, remembering to space them apart.
- Bake for about 10-15 minutes or until they are lightly golden.
- Let the cookies cool on a rack.
- Once cool, spread a spoonful of jam on the flat side of the whole cookies and top with the cut-out cookies, pressing gently to seal them.
Curiosity
The tradition of jam-filled cookies has European origins, with one of the most famous versions coming from Austria, called the Linzer Torte, from which the Linzer cookies were inspired. The Italian touch in this version comes from the use of ground almonds and lemon zest, often present in the pastries of our peninsula.
