Almond Tartlets with Beer Cream

Ingredients

For the shortcrust pastry:

  • 200 g of type 00 flour
  • 100 g of cold butter, cubed
  • 80 g of icing sugar
  • 30 g of almond flour
  • 1 large egg
  • A pinch of salt

For the beer cream:

  • 250 ml of light beer (craft or high-quality beer is better)
  • 100 g of sugar
  • 2 egg yolks
  • 1 tablespoon of cornstarch
  • Zest of 1 lemon (preferably organic)

For decoration:

  • Slivered almonds
  • Icing sugar (optional)

Preparation

  1. Begin by preparing the shortcrust pastry. Mix the type 00 flour with the icing sugar, almond flour, and salt in a bowl. Add the cold, cubed butter and start to mix with your fingertips until you obtain a sandy mixture.

  2. Add the egg and continue to knead until a compact dough is formed. Wrap it in cling film and leave it to rest in the refrigerator for at least 30 minutes.

  3. In the meantime, prepare the beer cream. In a small pot, heat the beer with the lemon zest without bringing it to a boil. In a separate bowl, beat the yolks with the sugar until frothy, then add the sifted cornstarch and mix well.

  4. Filter the hot beer onto the yolk mixture, stirring constantly. Return everything to the heat and continue stirring until the cream thickens. Once ready, remove from the heat and let cool completely.

  5. Take the pastry from the refrigerator and roll it out on a floured surface to a thickness of about 5 mm. Cut out discs of dough and line previously buttered and floured tartlet molds with them.

  6. Fill each tartlet with the beer cream, then decorate with the slivered almonds.

  7. Bake in a preheated oven at 180 °C for about 20-25 minutes or until the tartlets are golden brown.

  8. Let them cool before dusting with icing sugar if desired.
