Almond Tart

The almond tart is a sweet and crunchy dessert, a staple of Italian patisserie. Here is the recipe.

Ingredients

  • 250 g of all-purpose flour
  • 100 g of sugar
  • 125 g of butter at room temperature
  • 1 whole egg and 1 yolk
  • Zest of 1 lemon
  • A pinch of salt

For the filling:

  • 200 g of peeled almonds
  • 200 g of sugar
  • 100 g of soft butter
  • 2 whole eggs
  • A few drops of almond essence (optional)
  • Icing sugar for decoration

Preparation

  1. Begin by preparing the shortcrust pastry: combine the flour with the sugar, butter in pieces, the whole egg, yolk, grated lemon zest, and a pinch of salt. Work the ingredients quickly to obtain a smooth and homogeneous dough. Form a ball, wrap it in cling film, and let it rest in the fridge for at least 30 minutes.

  2. Meanwhile, prepare the almond filling. Finely chop the almonds in a food processor together with the sugar. Add the soft butter, eggs, and almond essence, and work until you get a homogeneous mixture.

  3. Roll out the shortcrust pastry in a uniform layer and line a previously buttered and floured mold, creating an edge that slightly exceeds the height of the filling. Prick the base with the tines of a fork.

  4. Pour the almond filling into the base of shortcrust pastry and level the surface.

  5. Bake the tart in an already hot oven at 180 °C for about 30-35 minutes, or until the surface is golden brown.

  6. Allow the tart to cool completely before dusting it with icing sugar.
