Almond muffins with chocolate chips

The almond muffins with chocolate chips are a delicious treat, perfect for breakfast or as a snack. Here is the recipe to prepare these fluffy bites:

Ingredients

  • 200 g of all-purpose flour
  • 100 g of almond flour
  • 200 g of sugar
  • 2 eggs
  • 125 ml of vegetable oil
  • 125 ml of milk
  • 1 packet of baking powder
  • 1 pinch of salt
  • 1 teaspoon of vanilla extract (or vanillin)
  • 100 g of chocolate chips
  • Sliced or whole almonds for decorating (optional)

Preparation

  1. Preheat the oven to 180 °C (350 °F) and prepare a muffin pan by lining the holes with paper liners.
  2. In a large bowl, sift together the flours, baking powder, and salt.
  3. In another bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
  4. Add the oil and milk to the egg and sugar mixture, then mix until well combined. Incorporate the vanilla extract.
  5. Combine the dry ingredients with the wet mixture, mixing gently to not deflate the batter.
  6. Fold the chocolate chips into the batter, making sure to save some to decorate the tops of the muffins before baking.
  7. Distribute the batter into the paper liners, filling them about 3/4 full.
  8. Decorate the tops of the muffins with the reserved chocolate chips and, if you wish, add the sliced or whole almonds as well.
  9. Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
  10. Once baked, remove the muffins from the oven and allow them to cool on a wire rack before serving.
