Almond muffins with chocolate chips
17/11/2023The almond muffins with chocolate chips are a delicious treat, perfect for breakfast or as a snack. Here is the recipe to prepare these fluffy bites:
Ingredients
- 200 g of all-purpose flour
- 100 g of almond flour
- 200 g of sugar
- 2 eggs
- 125 ml of vegetable oil
- 125 ml of milk
- 1 packet of baking powder
- 1 pinch of salt
- 1 teaspoon of vanilla extract (or vanillin)
- 100 g of chocolate chips
- Sliced or whole almonds for decorating (optional)
Preparation
- Preheat the oven to 180 °C (350 °F) and prepare a muffin pan by lining the holes with paper liners.
- In a large bowl, sift together the flours, baking powder, and salt.
- In another bowl, beat the eggs with the sugar until you have a light and fluffy mixture.
- Add the oil and milk to the egg and sugar mixture, then mix until well combined. Incorporate the vanilla extract.
- Combine the dry ingredients with the wet mixture, mixing gently to not deflate the batter.
- Fold the chocolate chips into the batter, making sure to save some to decorate the tops of the muffins before baking.
- Distribute the batter into the paper liners, filling them about 3/4 full.
- Decorate the tops of the muffins with the reserved chocolate chips and, if you wish, add the sliced or whole almonds as well.
- Bake the muffins for about 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Once baked, remove the muffins from the oven and allow them to cool on a wire rack before serving.

Almond flour not only adds a delicate almond flavor to the muffins but also a particularly moist and soft texture, while the dark chocolate chips offer a pleasant contrasting note.
