Almond Muffins

Preparation

  1. Preheat the oven to 180 °C and prepare a muffin tin by lining the cups with paper liners.

  2. In a bowl, mix the sifted flour, baking powder, and finely ground almonds.

  3. In another bowl, beat the soft butter with the sugar until you have a creamy mixture. Add the eggs, one at a time, continuing to beat.

  4. Incorporate half of the dry ingredients into the creamy mixture, then pour in the milk and almond essence and mix well.

  5. Add the remaining dry ingredients and mix until you have a smooth mixture.

  6. Fill the muffin liners with the batter, filling them about 2/3 full.

  7. Distribute some almond flakes on top of each muffin.

  8. Bake in the oven for about 20-25 minutes, or until golden and a toothpick inserted in the center of a muffin comes out clean.

  9. Let the muffins cool on a wire rack before serving.
