Almond Biscuits

Almond biscuits are a traditional delicacy, simple yet delicious. Now I will present you with a basic recipe to prepare them.

Ingredients

  • 200 g of type 00 flour
  • 100 g of peeled almonds
  • 100 g of sugar
  • 100 g of butter
  • 1 egg
  • 1 yolk (for brushing)
  • Grated zest of 1 lemon (organic if possible)
  • A pinch of salt
  • 1/2 teaspoon of baking powder

Preparation

  1. Preheat the oven to 180 °C.
  2. Finely chop the almonds in a mixer or with a food processor.
  3. In a large bowl, mix the flour with the butter cut into pieces, working them until a sandy mixture is obtained.
  4. Add the sugar, chopped almonds, baking powder, lemon zest, and pinch of salt, and blend all the ingredients together.
  5. Incorporate the egg and work the dough until a homogeneous ball is formed.
  6. Wrap the dough in cling film and let it rest in the refrigerator for at least 30 minutes.
  7. Roll out the dough on a lightly floured surface to about 0.5 cm thickness.
  8. With a cookie cutter or a knife, cut out the biscuits into the desired shape.
  9. Arrange the biscuits on a baking tray lined with parchment paper, spacing them slightly apart.
  10. Brush them with beaten egg yolk for shine and color.
  11. Bake for about 10-15 minutes or until the edges of the biscuits begin to brown.
  12. Remove from oven and let cool completely before serving.

Curiosity

In some variations of the recipe, to make the biscuits even richer and more aromatic, almond essence is also added to the dough or the surface of the biscuits is decorated with almond flakes before baking.

Remember that almond biscuits can be perfectly stored in a tin box for several days, maintaining their crispness. They are perfect for accompanying tea or coffee.
