Almond Chicken

Ingredients

Preparation

  1. Start by toasting the almonds in a pan without adding any fats until they turn golden. Then set them aside.
  2. In another pan, heat some olive oil and sauté the finely chopped onion, crushed garlic, and grated ginger until they become translucent.
  3. Add the chicken pieces to the pan and sear them until they are golden on all sides.
  4. Add the carrots cut into sticks and continue cooking for a few minutes.
  5. Deglaze with the white wine and let the alcohol evaporate.
  6. In a separate bowl, mix the chicken broth with the soy sauce and cornstarch, then pour everything into the pan.
  7. Season with salt and pepper, and cook over medium-low heat until the sauce has thickened and the chicken is cooked.
  8. One minute before turning off the heat, add the toasted almonds and mix well.
  9. Serve hot with a side of steamed rice or, if you want to stick with the Italian theme, with a nice mashed potatoes.
