Almond and Coconut Okara Bon Bons

Ingredients

  • 1 cup of almond okara (okara is the residue from the preparation of almond milk)
  • 1/2 cup of shredded coconut
  • 2-4 tablespoons of maple syrup or honey, depending on the desired sweetness
  • 1 teaspoon of vanilla extract (optional)
  • 1 pinch of salt
  • Dark chocolate for coating (optional, omitted if you want a completely raw bon bon)

Preparation

  1. Start by mixing in a bowl the almond okara with the shredded coconut, maple syrup or honey, vanilla extract, and a pinch of salt, until the mixture becomes homogenous and moldable.
  2. Form balls with the mixture and place them on a tray lined with parchment paper.
  3. If you choose to include the chocolate coating, melt the dark chocolate in a double boiler or in the microwave, being careful not to burn it.
  4. Once the chocolate has melted and is smooth, dip the okara balls one at a time, until completely covered, and then place them back on the tray.
  5. Put the bon bons in the refrigerator for at least an hour, so they firm up.
