Almond and Chocolate Tart

Ingredients
- 200 g of type 00 flour
- 100 g of cold butter, cubed
- 80 g of powdered sugar
- 1 large egg
- 1 pinch of salt
- Grated zest of 1 lemon (optional)
For the almond cream:
- 150 g of finely chopped almonds
- 150 g of sugar
- 150 g of soft butter
- 2 large eggs
- 1 tablespoon of rum (optional)
For the chocolate filling:
- 150 g of dark chocolate
- 100 ml of fresh cream
Preparation
- Start by preparing the shortcrust pastry by mixing the flour, butter, powdered sugar, a pinch of salt, and the lemon zest. Work the mixture until it becomes like coarse sand.
- Add the egg and knead until it forms a compact ball. Wrap in plastic wrap and let rest for 30 minutes in the refrigerator.
- In the meantime, prepare the almond cream. Cream the butter with the sugar until the mixture is fluffy. Add the eggs one at a time and then the chopped almonds and rum. Mix until a smooth cream is obtained.
- For the chocolate filling, melt the dark chocolate in a double boiler or microwave and mix it with the fresh cream until a smooth ganache is obtained.
- Roll out the shortcrust pastry into an even layer and line a buttered and floured tart pan.
- Pour the chocolate ganache over the shortcrust base and spread it evenly.
- With a spoon, distribute the almond cream over the chocolate layer.
- Bake in a preheated oven at 180 °C for 35-40 minutes or until the surface of the tart is golden brown.
- Let cool completely before serving.
