Thousand-taste Terrine

Ingredients

  • 2 tablespoons of salted capers
  • Fresh aromatic herbs (basil, parsley, chives)
  • Salt and pepper to taste
  • Rye bread or other types to serve

Preparation

  1. Start by preparing the ingredients: rinse the capers to remove excess salt and chop them finely together with the aromatic herbs, cut the sun-dried tomatoes into small pieces, and slice the olives.
  2. Take a large bowl and blend the creamy cheese with the goat cheese until you have a homogeneous mixture.
  3. Add the cooked ham, sun-dried tomatoes, olives, capers, and chopped aromatic herbs to the cheese mixture. Season with salt and pepper to taste and mix well.
  4. Line a loaf pan (or a terrine mold) with cling film, letting the film hang over the sides so it can be folded over the top of the terrine later.
  5. Pour the mixture into the mold and press it down well with a spoon to remove any air bubbles and to give the terrine a compact shape.
  6. Fold the cling film over the top of the terrine and refrigerate for at least 4 hours, or better, overnight, so it sets firmly.
  7. When ready to serve, invert the terrine onto a serving plate and remove the cling film.
  8. Serve with slices of toasted rye bread or the bread of your choice.
